Check out this FFGL tool for mapping i think its great: http://irworkshop.com/products/mapio
photoshop mask mapping will not work on big projections like buildings, because only a little angle change in the position of projector will result with big displacement on projection screen (build or watewher).

If you experience issues with photoshop automatically scrolling when you get near the edge of the screen, try using the graphic editor called gimp instead of photoshop. It's free and doesnt seem to have this issue.

Awesome stuff

I want to get into and learn more about Projection Mapping - where can I begin?

What tools can I use to make it easier to learn and mess around with?
