What is causing params to become changed inadvertently? external controller getting bumped, or just user error of someone clicking on stuff they shouldn't?

Sounds like your fixtures are not in the same mode as the profile you are using, so you are sending rgb values to other channels than the specified rgb channels for that fixture. Can you double check your fixtures profile mode and address and make sure arena is setup to match that?

You can build something out in Wire where you use 2 encoders, like an etch-a-sketch, and draw lines out that way.
