DVI single link is 165 MHz, (max 1920x1200/60) however you use that bandwidth and DVI-DL (dual link) is 330 MHz (max 2560x1600/60). You need a special adapter and cables to push DL. DVI-DL will support up to 4K/30 but nothing larger.

You can use layers but I personally use groups for my various screens.
I would suggest you use the highest resolution of your three outputs. Or you can create a composition that is combination of the three outputs and use Slice Transform with the slices that correspond to your various displays to position your content on the final output.
