I've been stuck with this as well, very happy with my MBP Retina, not really happy with the newest version MBP.
I'm planning on going hackintosh.

You should be able to set one of your midimix's to midi CH1 and the other to midi CH2.
This way you can use both in full function without overlapping.
I used to do this with 2 BCF2000's.

Are you on PC or mac ?
I know it's fairly easy to change the settings on mac.

Have you thought about a dedicated digital signage player ?
Or does it have to be with resolume ?

You'll need a dual link DVI to reach such an output resolution out of your macbook. As far as the FX4, It's capable of an input resolution of 8k in either direction. so you should be good on that part. You can preconfigure the datapath to the right edids you want to send to the projectors and macboo...

Your controller should have the knobs, buttons and encoders you think you need.
It highly depends on your desired workflow imo.
