Can't you do it with a GTX 670 or GTX 680 in your Mac Pro and put a TripleHead2Go on one of the outputs? That would give you a total of 7 outputs. 1. I'm pretty sure you don't need absolutely need to as that projector will take 720P and scale it to it's native Resolution. However if you want the best video quality you should change the resolution of your clips and project size to the native resolution of the projector which is XGA (1024 x 768)...
